First course: Caprese salad | Fresh mozzarella, heirloom tomato, fresh basil, and balsamic vinegar reduction | Paired with Rove’s Sauvignon Blanc (herbaceous with notes of pomelo, and guava)

Second course: Vichyssoise | Potato and leek soup with chives | Paired with Rove’s Dry Riesling (rich orchard fruit, citrus peel, and soft minerals)

Third course: Beef Wellington | Beef tenderloin seared rare with duxelles wrapped in puff pastry served with a red wine veal demi glacé and truffled whipped potatoes | Paired with Rove’s Cabernet Franc / Merlot (dark fruit compote, clay pots, and juniper berries)
